This is based off mediterranean-style pita sandwiches a fellow intern and I used to make at Vegan House for “family dinners,” except we would also make Fantastic Foods falafel (that stuff is actually really good!) for our sandwiches and a side of frozen french fries with Vegenaise. Mmm, good times.

Anyway, the pizza: Baked the dough on the stone by itself, then spread on some homemade hummus and topped it with sliced tomatoes, cucumbers, red onions, and olives. I would’ve garnished it with parsley except the herbs I have growing on my windowsill aren’t big enough to use yet! I then realized that if not for the dough, this pizza would totally be raw, if you’re into that sort of thing.

This post contains many firsts! It was my first time cooking from Vegan on the Cheap, which just came in the mail a few days ago and I made 2 recipes from, my first time using the shredding blade on my food processor (which was fun, and I only did because I had the food processor out already but would not use if I hadn’t), my first time putting carrots in marinara sauce, and of course my first time making a “meatball” pizza.

The pizza was inspired by this delicious looking one posted on the PPK forums. The original purpose of my pizza was to see how it would taste with Veganomicon beanballs, but then I saw the wheatballs in VOTC and was eager to try them. I also made the marinara sauce from VOTC instead of Vegan With a Vengeance‘s pizza sauce.

So I’ve been neglecting MoFo all week; I haven’t posted at all since Monday. Surprisingly it’s not for lack of something to post about, I’m just getting burnt out on posting every day on top of activism/events, school, and work. Anyway, it’s the last week! And how could I not post about my Thanksgiving dinner?

Gay Pancakes.

Tips:

  1. These make a lot of dishes, so be prepared. You’ll need 6 separate bowls and spoons to mix the different colors with.
  2. Make sure the batter is undermixed before you start separating and mixing the colors in, because you will be mixing a lot and don’t want to overmix or else you’ll have flat pancakes.

Sometimes I just don’t have it in me to pack a good lunch to take to school. I forget. I don’t have time. I get lazy.

When this happens, I just throw a container of WholeSoy & Co yogurt in my lunch box along with a bag (yes, the whole bag… I’m too lazy to put some of it in a little tupperware container) of granola and a spoon. Voila. Lunch.

 

I should really start making my own granola, but that would go against the “laziness” part. I will do it, though. I should also throw in a piece of fruit to be extra healthful, especially since I feel like all I’ve eaten in the past week has been unhealthy stuff with fake cheese on it. Pizza. Quesadillas. Cheezsteaks. Mac n cheeze.

I feel like I’m always giving you ideas of what to do, so here’s an idea of what NOT to do: make some ramen in the morning to pack and take with you. This is probably common sense to most folks, but by the time you’re ready to eat your lunch the noodles will have absorbed all the broth and just be really soggy. Save your ramen for when you’re at home and feeling lazy.

A few weeks ago when I was at school having lunch with my friend, I decided I wanted to make a chocolate bundt cake with peanut butter filling and a coffee glaze. The world’s three best flavors all combined into one cake, oh my!

Note: The peanut butter wasn’t supposed to be at the top like that. I didn’t put enough batter in the bundt pan before adding the peanut butter tube, so it sunk right to the bottom. Luckily it didn’t get all caramelized and burnt to the pan like I feared! It just didn’t look as impressive as I hoped. Otherwise it was fine.

I googled “peanut butter filled bundt cake,” and surprisingly the first result that came up was vegan! I used the peanut butter filling from that recipe (link), along with the chocolate cupcake recipe from Vegan Cupcakes Take Over the World. The cake turned out very chocolatey and moist. By the way, cake is the ONLY thing that can ever appropriately be described as “moist”… don’t even try using it in any other context. ew.

The coffee-chocolate glaze was comprised of about 1 tablespoon chocolate chips, 2 tablespoons cold coffee, and 4 tablespoons powdered sugar. I had filled an ice cube tray with leftover coffee little over a week ago just for such occasions as this, so I popped one cube out and put it in a bowl with the chocolate chips and melted them together in the microwave. Then I mixed in the powdered sugar (it works better if you sift the powdered sugar, I didn’t and it was a little clumpy) and drizzled the glaze over the cake with a spoon.

Notice the Harry Potter mug in the background. That’s me getting excited for the movie release on Friday, woo!!

Overall the cake was reminiscent of eating my dad’s chocolate covered peanut butter eggs on Easter mornings with a nice hot cup of coffee. It was such a big success in my house that it was gone in 3 days!

As you were probably able to tell from the links I posted yesterday, I tried my hand at buffalo tofu pizza again. This time I was successful in not flipping it upside down in the oven! I was very proud of myself.

Square pizza! Because pizza bakes so much better on a stone (like, infinitely better this time than on the cookie sheet I used last week) and my little stone is the perfect size for a little rectangular pizza.

I made the buffalo tofu from this post, and used the marinade/sauce as the sauce for my pizza. I then put the tofu on and topped it off with a mixture of Teese and Daiya. I made some “blue cheese dressing” from this recipe and plopped some spoonfuls of that on top, something I hadn’t done last time I tried making this pizza.

The pizza overall was really good! It could’ve been a little hotter (I even added some Sriracha to the sauce to make it hotter), but that could have been due to the really cheap hot sauce I used (erm, Tops store brand). The blue cheese dressing I made was alright, though strangely some bites seemed to have more tang than others.
